Serving classic Christmas treats

THERE are a few things better than comfort food, like familiar flavours that conjure up memories of our grandmother’s kitchen, creating nostalgia at Christmas time.

For people who cannot replicate their favourite dishes, we can always rely on chefs to do it.

Lexis Hibiscus Port Dickson culinary director chef Ryan Poon, whose 21 years of cheffing includes stints in Ireland, Dubai, Egypt and Hong Kong, recreates the classic Christmas dishes we have all grown to love.

“Instead of trying to be too experimental, I stuck to the basics to offer classic favourites that most of us crave this time of year,” he said.

On the menu at Roselle Coffee House this Christmas is a perennial favourite – roast turkey – which will be the highlight of the Christmas Eve and Christmas buffet.

“The turkey is brined overnight in vegetable stock that consists of diced celery, onion, carrots and leek.

“By brining, the bird stays juicy during the cooking process, which results in more succulent meat,” he said.

The accompanying turkey stuffing is made with breadcrumbs and flavoured with herbs such as oregano, thyme, rosemary and parsley.

Also on the menu is roast lamb that is marinated for three days in a herb and spice blend to enhance the meat’s natural flavour and tenderise it for cooking, as well as roast rib-eye served with mini Yorkshire pudding drizzled with beef drippings.

To complement the roasts, Poon has prepared a selection of sauces, which include cranberry and pomegranate sauce (a combination of fresh and canned cranberries plus fresh pomegranate juice), giblet gravy, honey rosemary sauce and mint sauce.

There are sides such as buttered corn, grilled pineapple slices, jacket potatoes, baked pumpkin with Parmesan and beef bacon, boiled carrots and Brussels sprouts.

For customers who crave Asian flavours, the buffet will have all-time favourites such as chicken and beef satay, abalone congee, Hainanese chicken rice, beef rendang and Chinese lotus leaf rice as well as individual portions of steamed jumbo Pacific clams.

There will be more than 80 dishes, including appetisers, salads, soups and pasta on the menu.

For a sweet finish, guests can have their fill of desserts such croquembouche (choux pastry balls piled up in a towering cone), English trifle, gingerbread creme brulee, fruit cake, cheesecake, classic Yule log and dainty fruit tartlets.

The Festive Dinner Feast for Christmas Eve and Christmas is priced at RM168nett (per adult) and RM88nett (per child).

Festive menus are also available at the hotel’s other eateries. These include a four-course Christmas dinner at Wave Dining (RM148nett per adult), and Christmas Eve and Christmas Japanese buffet at Umi Japanese Restaurant (RM168nett/adult and RM88nett/child).
